Road Trip to Portland, Oregon

We’re heading on a road trip to Portland, OR!

My husband was invited to a conference with The Bible Project. We love The Bible Project. They have high-quality videos, podcasts, and other materials on their website that are all completely free. My husband recently finished an online class, Introduction to the Hebrew Bible. We were very excited to receive the invitation to the conference.

Last November, the kiddos and I tagged along on my husband’s work conference trip to Nashville, TN. That trip went pretty well, so we were game to tag along again this time!

Before heading off on our adventure we read “B is for Beaver: An Oregon Alphabet”.

We learned a lot about Oregon, and discovered a few fun places we wanted to check out during our visit.

It’ll take us a full day to drive to Portland and a full day to drive home. The conference is 3 days long and we have one extra day to explore together as a family.

There is so much to do in the Portland area. It was extremely difficult to narrow down what we wanted to do in the short time we were there. I try to keep the idea of “balance” in my mind when I am planning an itinerary. I also read a blog somewhere that said, when visiting somewhere on vacation, one should try to do things that area unique to the area. So I tried to squeeze in a little bit of educational stuff, a little bit of outdoor stuff, a little bit of art/culture stuff, and enough down time to retain what’s left of our sanity.

We were able to make our favorite road trip snacks:

Egg-less Vegan Tofu Salad

Edamame Dip

Banana 🍌 Bread (We made mini muffins with this recipe)

“Breakfast cookies” (we use the recipe on the back of a Craisin package, but we substituted dried strawberries and dark chocolate chips)
