Basque-Inspired Vegetarian Haystack Recipe

This dinner was the birthday meal that I prepared for my husband this year. He and I both really enjoyed it so it was a success! I was pleased that my fusion idea turned out as well as it did. I took a traditional meal that I grew up with, Haystacks, and created a fusion recipe inspired by Basque cuisine which is popular in parts of Nevada. I was raised in Seventh-Day Adventist Church and School and haystacks are very frequently served at group gatherings. They are filling, fairly heathy, inexpensive, and easy to prepare for a large group.

Ingredients:

Pipernade (a Basque staple according to the cookbooks I perused)

Basque Piperade Recipe

Sheep’s milk cheese such as Roquefort (from France) or Manchego (from Spain)

white navy beans – soak beans overnight, rinse very well with warm water, drain and return to saucepan, cover with veggie broth, bring to boil, simmer until soft, add salt to taste

cooked plain white rice

1 head of lettuce – finely sliced

corn chips such as Reduced Sodium Fritos

chips
beans
rice
piperade
shredded lettuce
shredded cheese & garlic dressing

  1. Fun! We often mix up our haystacks…with whatever we have in the fridge 🙂 I have half a head of purple cabbage that I’m planning to turn into purple cabbage haystacks this weekend. I’ll have to try your Basque version!

  2. This is so funny! As soon as I saw the word “Haystacks” I wondered if you had an SDA background. It’s a staple for us, right? Potlucks, reunions, any get together is the right time for Haystacks. I did know a woman who called them “Tophats.”

    Our daughter-in-law makes Thai stacks. Same idea, just different ingredients. 😄
