I love split pea soup. My husband really does not love split pea soup. This is my recipe for “split pea compromise soup” or “not really split pea soup”, it is a drastic adaptation of the recipe for Spilt Pea Soup from the restaurant Pea Soup Andersons. It isn’t the prettiest soup but it sure tastes good.
4 cups low sodium vegetable broth
4 cups water
3/4 cup dry green split peas
3/4 cup lentils
1/2 cup pearl barley
2 bay leaves
Bring all this to a boil and then simmer for 30 min give or take.
1 large carrot
1 celery stalk
1 sweet onion
Saute these until nice and soft in some butter or olive oil.
Next, mix the sauteed veggies into the simmer pot and add the following seasonings.
1 tsp thyme
1-2 tsp Lawry’s garlic salt: coarse ground with parsley
1/2 tsp onion powder
1/2 tsp cumin
pinch cayenne pepper
salt & pepper to taste
Simmer for a few more min (about 10) for the flavors to combine.
Garnish with sour cream and crackers. Enjoy!
